Sheet Pan Chicken Quesadillas for the Whole Family

Chicken quesadillas are a forever yes in our house, so I figured out how to make them for the whole family in ONE pan. No flipping, and no standing at the stove making them one at a time.

In about 25 minutes you get crispy edges and a cheesy middle, cut into strips that little hands can dunk in salsa, sour cream or Greek yogurt.

Quesadillas are one of the few dinners my 4-year-old twins will reliably eat, so they’re on repeat at our house. This sheet pan version is how I keep them on the menu without losing my whole evening.

Why You’ll Love This Recipe

  • Feeds the whole family at once
  • No flipping or babysitting the stove
  • Rotisserie chicken makes it quick
  • Kid-friendly strips for dipping

What You’ll Need

  • Large flour tortillas: 8. Six line the pan, one goes in the center and one goes on top.
  • Cooked shredded chicken: 2 cups. Rotisserie chicken works great.
  • Shredded cheese: 2 cups of Mexican blend or Monterey Jack.
  • Black beans: ½ cup, rinsed. Optional, and easy to leave out for picky eaters.
  • Mild chili powder or cumin: ½ teaspoon to season the chicken.
  • Olive oil or melted butter: 1 tablespoon for brushing, so the tortillas turn golden and crispy.
  • Dips: Salsa, sour cream or plain Greek yogurt.

How to Make Sheet Pan Quesadillas

Step 1: Line the pan

Heat the oven to 425°F and brush a rimmed sheet pan with half the oil. Lay 6 tortillas around the pan so they hang over the edges, then place 1 in the center.

Step 2: Fill

Toss the chicken with the spice. Sprinkle on half the cheese, then the chicken and beans, then the rest of the cheese.

Step 3: Fold and top

Fold the overhanging edges in, top with the last tortilla, and brush the top with the remaining oil.

Step 4: Press and bake

Set a second sheet pan on top to press it flat. Bake for 15 minutes, removing the top pan for the last 5.

Step 5: Slice and serve

Cool for 3 minutes, slice into squares or strips, and serve with dips.

Busy Mom Tips

  • Rotisserie chicken works great here.
  • For picky eaters, keep the beans on the side or leave them out.
  • Swap sour cream for plain Greek yogurt for an extra protein boost.

Frequently Asked Questions

Why put a second sheet pan on top?

The second pan presses the quesadilla flat so it bakes evenly and gets crispy. Remove it for the last 5 minutes so the top can brown.

Can I make these without beans?

Yes. The beans are optional, so leave them out or serve them on the side for picky eaters.

What can I use instead of sour cream?

Plain Greek yogurt is a great swap and adds a little extra protein.

How to Store and Reheat

Refrigerate leftovers in an airtight container for 3–4 days. Reheat in the oven or air fryer to keep the tortillas crispy.
