Teriyaki Turkey Meatball Rice Bowls

These Teriyaki Turkey Meatball Bowls are a fun twist on a classic weeknight dinner. Tender turkey meatballs are coated in a sweet and savory homemade teriyaki sauce and served with rice and broccoli. They're easy to make, packed with flavor, and great for meal prep too!

Ingredients
  

For the meatballs:
  • 1 lb lean ground turkey
  • 1 egg
  • 1/2 c panko bread crumbs
  • 2 green onions, sliced
  • 2 cloves garlic
  • 1 tsp grated ginger
  • 1 tbsp soy sauce
For the teriyaki sauce:
  • 1/4 c soy sauce
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tbsp minced garlic
  • 1 tsp grated ginger
  • 1 tsp corn starch
  • 1 tbsp water
For serving:
  • 4 c cooked jasmine rice
  • 3 c steamed broccoli

Method
 

  1. Preheat oven to 425°F.
  2. Mix turkey, egg, breadcrumbs, green onions, garlic, ginger, and soy sauce well. 
  3. Form mixture into approximately 16 meatballs.
  4. Place meatballs on a lined baking sheet and bake for 20-22 minutes, or until cooked through.
  5. While meatballs cook, whisk together soy sauce, honey, rice vinegar, garlic, ginger, and cornstarch mixed with water.
  6. Pour sauce into a skillet and simmer over medium heat until slightly thickened.
  7. Add cooked meatballs and toss to coat.
  8. Serve over rice with steamed broccoli.
  9. Top with green onions and sesame seeds (optional).

Notes

HBM Tip: Make the meatballs ahead of time and freeze them. Then you can pull them out whenever you need a quick dinner.
