Crispy Air Fryer Salmon Rice Bowls

If you love salmon bowls, you HAVE to try this version! Crispy salmon, sweet pineapple, edamame, crunchy carrots and a creamy honey-soy drizzle. It’s an easy, high-protein dinner the whole family can enjoy!

Ingredients
  

  • 1 lb salmon
  • 1 tbsp olive oil
  • 1 tbsp soy sauce (for salmon marinade)
  • 1 tbsp honey (for salmon. marinade)
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika
  • 2 cups cooked rice
  • 1 cup shelled edemame
  • 1 cup shredded carrots
  • 1/2 cup greek yogurt
  • 1 tbsp soy sauce (for drizzle sauce)
  • 1 tbsp honey (for drizzle sauce)
  • 1-2 tsp sriracha

Method
 

  1. Preheat your air fryer to 400°F.
  2. Toss salmon cubes with olive oil, soy sauce, honey, garlic powder and smoked paprika. Air fry for 7–9 minutes, shaking halfway through, until the salmon is cooked through and crispy around the edges.
  3. While the salmon cooks, mix together the Greek yogurt, soy sauce, honey and sriracha to make the drizzle.
  4. Build your bowls with rice, edamame, shredded carrots and pineapple. Top with crispy salmon.
  5. Drizzle with the creamy honey-soy sauce and add crispy wonton strips if desired.
