
Sheet Pan Sausage and Veggies
This is one of those dinners I love when I want something easy, hearty, and with minimal cleanup. Everything goes on one pan, you pop it in the oven, and dinner is basically done! Plus, it’s super easy to swap in whatever veggies you have on hand—which is always a win for a busy weeknight.
Ingredients
Method
- Preheat oven to 425°F.
- Add potatoes to a large sheet pan. Toss with olive oil, garlic powder, Italian seasoning, salt and pepper.
- Roast potatoes for 15 minutes.
- Add sliced sausage, broccoli and bell pepper to the pan. Toss everything together.
- Roast another 20–25 minutes, until the potatoes are tender and the sausage is browned.
- Serve as-is or with your favorite dipping sauce!
Notes
Busy Mom Hack: Use pre-cut veggies + microwave-ready baby potatoes to cut prep time way down. You can also swap in whatever veggies you already have in the fridge!
Picky Toddler Hack: Don't mix everything together on their plate! Serve the sausage, potatoes and veggies deconstructed so they can choose what to eat. Add ketchup or ranch for dipping if that helps.
