Creamy Cajun Chicken Pasta

A creamy, flavorful pasta dinner that comes together in about 20 minutes. This is comfort food made easy for busy nights.

  • 1 lb chicken breast cut into bite-size pieces
  • 8 oz penne pasta
  • 1 tbsp olive oil
  • 2 tsp Cajun seasoning
  • 3 cloves garlic minced
  • 1 cup chicken broth
  • ¾ cup heavy cream
  • ½ cup grated Parmesan cheese
  • 2 tsp corn starch
  • Salt and pepper to taste

Method
 

Directions
  1. Cook pasta according to package directions. Reserve about ½ cup pasta water before draining.
  2. Season chicken with Cajun seasoning.
  3. Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through.
  4. Add garlic and cook for about 30 seconds.
  5. Add chicken broth, scraping up any browned bits from the bottom of the pan.
  6. Stir in heavy cream and Parmesan. Simmer for 2–3 minutes until slightly thickened. This is where you might need to add those 2 tsp of cornstarch to help with thickness.
  7. Add cooked pasta and toss until everything is coated in the sauce.
  8. Add a splash of reserved pasta water if needed to reach your desired consistency.

Notes

HBM Tip: Use rotisserie chicken instead of cooking chicken from scratch when you need to get dinner on the table even faster.
